Char Siu (Chinese BBQ Pork)

Char Siu, also known as Chinese BBQ Pork, is a type of roast meat that has an aromatic, smoky and sweet taste. It is a signature dish of Cantonese cuisine that can be easily prepared at home.

Preparation: 10 minutes Marinating: 3 hours 
Cooking: 25 minutes Quantity: 4 portions 

Ingredients:

  • 800g boneless pork shoulder
  • 35g Char Siu sauce
  • 20ml (2 tbsp) oyster sauce
  • 10ml (2 tsp) sugar
  • 5ml (1 tsp) salt
  • 2.5ml (1/2 tsp) ground black pepper
  • 200g Shanghai Bok Choy
  • 1 liter (4 cups) cooked jasmine rice
  • A few leaves of fresh coriander

Directions:

  1. Cut the pork shoulder into two or three pieces.
  2. In a bowl, combine the Char Siu sauce with the oyster sauce, sugar, salt and pepper. Place the meat in the bowl and toss to coat well with the marinade. Cover and marinate for at least 3 hours in the fridge.
  3. When cooking, preheat the oven to 180°C.
  4. Place the pork on a foil-lined baking sheet. Bake for 25 minutes, turning the meat halfway through cooking. Remove from oven and slice.
  5. In a pot of salted boiling water, cook the Bok Choy for 4 minutes.
  6. Divide the jasmine rice into four plates. Place the pork slices on the rice. Service with Bok choy.
  7. Garnish with coriander.
